My 2.5-year-old son is going through a phase of loving one food one day and hating it the next. This seems to be the case, for hotdogs, waffles, chicken nuggets, and peanut butter toast. Now, I know good and well that he likes these foods but some days he refuses to eat them. It can be endlessly frustrating to constantly feel like I am begging my son to eat real food. But, there is something that I can almost always count on. Bananas! My son loves fruit but especially bananas. He just needs the peel removed and he is good to go! So, I started thinking to myself “are there other ways to use bananas to switch up his favorite food?” and here is what I found!
Banana Bites

Ingredients
- 1 medium banana
- 1/3 cup peanut butter, all-natural
- 1/3 cup apple juice
- 1 large egg
- 1/2 tsp vanilla extract
- 2/3 cup flour, whole wheat
- 1 1/3 cup oats, dry
- 1 teaspoon baking soda
Instructions
- Mix the first five ingredients very well.
- Then add whole wheat flour, oats, and baking soda.
- Blend all ingredients into the dry.
- Drop by teaspoon full onto cookie sheet.
- Flatten and shape with the back of a spoon.
- Bake in a 350-degree oven for 10 minutes.

- 1 banana

- 2 slices wholemeal bread
Instructions
- Mash banana until smooth.
- Whisk in egg until well combined.
- Add a pinch of cinnamon and stir.
- Cut pieces of bread into three even pieces.
- Dip into the banana egg mixture to coat
- Fry in olive oil on medium heat until browned.
- Flip and brown the other side.

- 4 bananas still relatively firm
- 1/2 cup smooth peanut butter
- 1 cup crisp rice cereal
- 1/4 cup mini chocolate chips
- 1/4 cup chopped nuts
Instructions
- In a shallow dish, heat up peanut butter for 30 seconds to become easier to spread.
- In another shallow dish combine cereal, chocolate chips, and nuts.
- Dip each banana into the peanut and coat fully, using a spoon if necessary to spread peanut butter over the banana.
- Coat the banana with the cereal mixture.
- Transfer the banana to a plate and allow it to set up in the fridge for 20 minutes or freezer for 5 minutes before slicing into 1 to 2-inch slices and serving.
