Mini turkey meatball and cabbage soup and turkey burgers!
So, occasionally I send my husband to the store for groceries with a list of things we need. He usually does pretty well with the list items but, he tends to stray from the list and get extra items. On this particular occasion, I came home with three pounds of ground turkey. So, I sought out inspiration for ground turkey recipes and from the inspiration, I developed the following recipes!
Mini turkey meatball and cabbage soup
This recipe was made using the turkey broth I made from the Thanksgiving turkey carcass and then froze but if you don’t have homemade broth then feel free to use store-bought.
Ingredients
Soup
- 6 cups of turkey broth
- ⅓ head cabbage, chopped
- 1 cup baby spinach leaves
- 1 large carrot, cleaned and chopped
- 1 stalk of celery, cleaned and chopped
- ½ green pepper, seeds removed, sliced and chopped
- ⅓ red onion chopped
Meatballs
- 1 pound ground turkey
- ¼ cup milk
- ½ cup freshly grated parmesan cheese
- ½ cup Italian bread crumbs
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic salt
- 1teaspoon onion powder
- 1 egg lightly beaten
Instructions
- Preheat oven to 375 degrees Fahrenheit
- Start by mixing ingredients for meatballs in a large mixing bowl with a wooden spoon or by hand (make sure hands are thoroughly washed before and after mixing)
- Grease a large baking sheet with a non-stick cooking spray
- Once all ingredients for meatballs are well combined, form ½ inch meatballs.
- Evenly place them on a prepared baking sheet.
- Bake them in the oven for about 25 minutes to 30 minutes or until cooked through.
- Remove from oven and set aside
- Heat broth in a large soup pot
- Add all ingredients (except meatballs) to the broth and allow to cook on low-medium heat for about 30 minutes or until vegetables are tender
- Add turkey meatballs to the soup for the last 5 minutes to 10 minutes of soup cook time.
- Stir occasionally
- Serve hot with buttered Italian bread on the side!
Turkey burgers and carrot fries!
The turkey burgers in this recipe are made similarly to the turkey meatballs. Also, the carrot fries were mentioned in a previous article Satisfying that nagging craving and I finally get to make them for myself!
Ingredients for burger patties
- 2 pounds ground turkey
- ¼ cup milk
- ½ cup freshly grated parmesan cheese
- ½ cup Italian bread crumbs
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic salt
- 1teaspoon onion powder
- 1 egg lightly beaten
- 3 tablespoons Dinosaur BBQ sauce
Ingredients to build burgers
- Turkey burger patties
- Ciabatta rolls
- Red onion slices
- Cabbage leaves
- Dinosaur BBQ sauce
- Cheese slice of choice
Recipe for carrot fries
Oven-Baked Carrot Fries
Ingredients
Carrots
- 4 large carrots
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp onion powder
- 1 pinch salt and pepper
Instructions
- Preheat oven to 425F degrees
- Wash and peel the carrots, also cut the ends off. Cut the carrots in half then slice each half in the middle (the long way). From each half, you can get 3-4 carrot fries. When done slicing all the carrots, place them on a large baking sheet
- Pour over the carrots the remaining ingredients and with your hands toss the carrots to coat evenly.
- Spread carrots in a single layer leaving enough space between them to bake properly.
- Bake for 15-20 minutes, turning them about halfway through.

The turkey meatball and cabbage soup recipe came out far better than I could have imagined and to top it off it is healthy, low calorie and low carb! The turkey burgers were flavorful, moist and light! Feel free to give these recipes a try the next time you have ground turkey on hand!
