These recipes offer up something a little sweet, a little spiced, and even just a nice, delicious treat. In my opinion, it seems like there are hard times everywhere and with this new year and new decade beginning, I can’t help but feel the desire to spread a little cheer. I believe these recipes could do just that!

Chocolate Sprinkle Donuts with Vanilla Glaze

Ingredients

Baked Chocolate Donuts

  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp espresso powder; optional, but it brings out the flavor of chocolate
  • 1 egg
  • 6 Tbsp half & half
  • 1/4 cup sour cream
  • 1 tsp vanilla extract
  • 1 Tbsp butter melted

Vanilla Glaze

  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 2-3 Tbsp whole milk (2% is fine as well)

Topping

  • Sprinkles

I don’t have a big sweet tooth, especially since having my son but, there is something nostalgic about making fresh donuts! I loved this recipe but, I also found alternative icing recipes that may suit your fancy.

Funfetti Donut Glaze:

  • 1 ½ cup (6oz/172g) powdered sugar
  • 2-3 tablespoons milk
  • 1 ½ teaspoons vanilla extract
  • 1 small drop Pink food coloring

Chocolate Donut Glaze:

  • 1½ cups (6oz/172g) powdered sugar
  • 4 tablespoons unsweetened cocoa powder
  • 3 tablespoons milk
  • 1 teaspoon pure vanilla extract

Maple Donut Glaze:

  • 1 ½ cup (6oz/172g)) powdered sugar
  • 2 tablespoons milk
  • 4 tablespoons maple syrup
  • 1 ½ teaspoons vanilla extract

Cinnamon Sugar:

  • 1 cup (8oz/225g) sugar
  • 2 tablespoons cinnamon

Instructions

Funfetti Donut Glaze:

  1. In a medium bowl, whisk together all of the ingredients.
  2. Whisk until silky and smooth.
  3. If you want it thinner add a little more milk
  4. Store the icing at room temperature in an airtight container for 2 weeks.

Chocolate Donut Glaze:

  1. In a medium bowl, whisk together powdered sugar and cocoa powder. Slowly stir in milk and vanilla extract. Whisk until silky and smooth. If you need a touch more milk to make this a dippable glaze, add a bit more.
  2. Dip doughnuts in chocolate glaze and let rest to harden slightly.
  3. Store the icing at room temperature in an airtight container for 2 weeks.

Maple Donut Glaze:

  1. In a medium bowl, whisk together all of the ingredients.
  2. Whisk until silky and smooth.
  3. If you want it thinner add a little more milk
  4. Store the icing at room temperature in an airtight container for 2 weeks.

Cinnamon Sugar:

  1. Combine sugar with cinnamon in a medium bowl.
  2. Dip donuts into cinnamon sugar while still warm.
  3. Cinnamon sugar can be covered and stored for up to 2 years.

Honey Cinnamon Star Anise Tea

Honey Cinnamon Star Anise Tea

Ingredients

  • 1 Stick Cinnamon
  • 6 Star Anise
  • 1 L Water
  • 2 Packets Black Tea
  • Honey To taste

Instructions

  1. In a saucepan add 1 L water, cinnamon & star anise. Boil for about 10 minutes.
  2. Turn off the heat. Add black tea and steep for 3 minutes.
  3. In a mug add the cinnamon star anise tea. Add honey to your taste. Enjoy while hot.

I have never tried star anise in any recipe but, I have become increasingly interested in it. I also read that there are a variety of health benefits to adding star anise to one’s diet. *Follow up article on Star Anise to come*

Luke’s Pizza Bagels

Luke’s Pizza Bagels

Ingredients

  • 3 bagels, cut in halves (can use any kind you desire)
  • 1 (213 ml) can pizza sauce
  • 6 slices pepperoni (thin slices) or 6 slices salami (thin slices)
  • 4 ounces mozzarella cheese, grated

Instructions

  1. Cut the bagels in half and lay on a baking sheet.
  2. On top of each bagel spread on pizza sauce, making sure to cover all the spots.
  3. Top with pepperoni and cheese.
  4. Put in the oven at 375 degrees and bake for approximately 10 minutes or until cheese and meat are bubbly.

I found this recipe to be an easy and delicious meal to make with kids!
